He moved to France at the age of 20 and opened his restaurant in Nice at the age of 25.
He is passionate about social action through food and has won and maintained a Michelin star and been awarded the Medal of Honour by the French government.

Naoyoshi Itani

Video production and coordination

Lives and works in Florence, Italy.
Studied history at an Italian postgraduate school and currently works as a video production coordinator and director, producing Japanese TV programmes and various videos locally in Italy.

Kumi Matsushita

Editor,Marketer,Writer and Director

Lives and works in the Netherlands.
Worked in advertising production, promotion and marketing in Japan for over 25 years. Discovered the appeal of dashi through fasting and ran the online dashi magazine ”Oishiidashi”.
